Coconoil

Coconut oil seems to be all over blog-land, but it is hard to find in the UK. I was lucky to be sent some coconut oil and coco-jacks from the lovely people at coconoil.

What is all the fuss about I hear you ask. Well, here is what they say on their website;

Sounds good to me.

I have used the coconut oil in lots of recipes;

I melted it and used it in place of vegetable oil in this pumpkin spiced cake. Delicious.

I used a tsp in the pan to cook these pancakes, and it was amazing as each bite had a lovely hint of coconut.

I also used coconoil in place of vegetable oil to fry veggies (most recently for the Autumn chilli I made) and to make sweet potato fries, which were amazing. So it really is very versatile.

The cocojacks were brilliant too.

They are flapjacks made with oats, coconut oil and sweet freedom syrup. No butter, no sugar, no preservatives- simple.  They had a lovely hint of coconut to them, and were really filling. Yum.
